The Wedding Cake Course will be held at our studio in Claremont Cape Town at
22 Roseville Rd, Claremont, Cape Town
The course dates are the week of 22-26 August 2022
Class starts promptly at 9:30 and ends at 15:30. There will be a short break for lunch (which is provided)
Daily schedule (schedule may change)
Day 1
Practical: Make royal icing
Basics of piping including borders
(shell border, snail trail, lines, basket weave and writing etc)
Cookie decorating
Make sugar roses
Theory: Tools and ingredients needed
Suppliers
Recipes (vanilla, red velvet, moist chocolate, carrot cake etc)
Fruit cakes (recipe and how to cover)
Alternate fillings eg mousse etc with recipes
Day 2
Practical: Cover cakes with fondant (real cake)
Simple fondant decorating (eg bows, ruffles, marbling, drapes, lettering etc)
Cover boards
Finish off roses and start on filler flowers
Theory: Meeting with your couple
Initial meeting, understanding their needs, and designing your cake
Dealing with difficult clients
Keeping records of discussions
Roleplaying exercise
Day 3
Practical: Make chocolate ganache
Chocolate panels
Chocolate collars
Piping with chocolate and making textured chocolate effects
Sharp corner ganache method
More advanced royal icing piping (including drop lines, embroidery etc)
Finalise project designs
Theory: Marketing
Establishing your target market
Trend spotting
Building your portfolio
Assembling wedding cakes and delivering
Dealing with industry suppliers (Wedding planners, florists, venues and photographers)

Practical: Naked cakes, drip cakes and working with fresh flowers

COVID information:
All attendees will be temperature checked on arrival, and hand sanitising protocols are in place. Masks must be worn at all times.
Weather permitting, class will be held on our back stoep. In the case of windy or rainy weather, class will be held inside with doors open for ventilation so please dress warmly.
If you are not feeling well or have been exposed to COVID19, DO NOT attend the class (see absentee and non-attendance information below).
Classes are limited to 6 people to maintain social distancing.
Class times: Please check your confirmation email when you book for class times. Classes will start and end promptly at the times advertised.
Venue: Please check your confirmation email when you book for the class venue. If there are any changes in venue you will be notified by SMS and email.
Equipment: Where applicable equipment is included in the cost of the courses (list is included in the class description). If you want to return unused items (eg. if you already have the item) please make arrangements with Julie, we will do our best to accommodate you. In the event of the equipment not being available, you will be supplied with an alternative and/or refunded. Please label all your equipment, the Studio is not liable for any lost equipment. For once-off workshops our equipment is supplied for you to use, please return it at the end of the class.
Ingredients: All ingredients are supplied for you. Your finished products are yours to keep, however no other ingredients may be removed from the premises unless you are told otherwise.
Boxes: A bakery box will always be supplied for you to take your items home, but where possible please try and bring containers from home in order to reduce unnecessary waste.
Aprons: Please bring an apron with you to all classes.
Bookings: All bookings are to be done through our online shop. Payments can be made via Payfast (secure online portal) or direct bank transfer (EFT). Full payment is required to confirm your booking. Please ensure the contact number and email address that you provide is correct.
If using direct bank transfer, the bank details will be displayed on the page after you click “Place Order”, your seat will be saved for 24 hours, please email your proof of payment to julie@juliescakestudio.co.za to confirm your seat (use your booking number as a reference). If we do not receive your proof of payment within 24 hours the booking will be cancelled. You will receive a confirmation email when the funds clear in our account.
If using Payfast, your confirmation will be immediate when you complete the Payfast transaction.
Once we have received your payment (in full) you will receive a confirmation email to confirm your seat. We will send out a further confirmation in the week before the class this will include confirmation of time, date, venue and any other relevant information. If you have any questions in the meantime please contact Julie via email or Whatsapp.
Cancellations By Julie’s Cake Studio: We reserve the right to cancel or reschedule the class at any time. If the class is cancelled, you will be refunded in full. If the class is rescheduled, then you will be given the option of booking for the new date, a voucher for a future class or a full refund. If Julie is ill and cannot find a suitable replacement teacher this will also apply. If the class is cancelled for any reason you will be notified by email and SMS as soon as possible.
Absentees and non-attendance: Please note that all tickets are non-refundable. You are more than welcome to transfer tickets (someone else can attend in your place if you are unable to make it).
If you miss a day that is part of the short course, this is also non-refundable.
COVID19 concession: If you are unable to attend because you are ill and/or self-isolating, we will accommodate you in a future class (this is subject to availability). No refunds will be made, and no credit will be carried forward.
Whatsapp groups: In most cases we set up a Whatsapp group for the class for easy communication, you will be asked if you want to join the group before we add you and the group will be closed and all attendees removed in the week after the course or class. You are welcome to join our bigger Whatsapp group for long term support or our Facebook private group. Please request the info from Julie.
Refreshments: Tea, coffee and biscuits will be provided during the class. For full day classes, a light meal will be provided. Unfortunately, we are not able to accommodate any specific dietary requirements, so if you have requirements, please bring along a snack.
** Please note that this is a home business so please respect the start and end times of classes. Also, please be aware that I do own pets (two cats and a dog), they are kept away from the learning area during class times**
