Gluten-free Date and Nut Loaf

A lovely simple gluten-free loaf

Ingredients
  

  • 250 g pitted dates
  • 250 ml boiling water
  • 125 g butter
  • 125 g sugar
  • 15 ml molasses
  • 1 egg
  • 300 g gluten-free flour
  • 15 ml baking powder
  • 5 ml bicarb
  • pinch of salt
  • 100 g pecans

Instructions
 

  • Preheat the oven to 160℃. Grease a loaf pan well.
  • Chop the dates and place in a sauce pan with the boiling water and butter. Bring to the boil and stir well to break up the dates. Remove from the heat and cool slightly.
  • Stir in the sugar, molasses and egg. Fold in the remaining ingredients and pour into the loaf pan
  • Bake for 45 - 50 minutes until baked through. A skewer inserted into the middle should come away clean.
  • Cool slightly before cutting but serve warm with butter.
