Gluten-free Date and Nut Loaf
A lovely simple gluten-free loaf
Ingredients
- 250 g pitted dates
- 250 ml boiling water
- 125 g butter
- 125 g sugar
- 15 ml molasses
- 1 egg
- 300 g gluten-free flour
- 15 ml baking powder
- 5 ml bicarb
- pinch of salt
- 100 g pecans
Instructions
- Preheat the oven to 160β. Grease a loaf pan well.
- Chop the dates and place in a sauce pan with the boiling water and butter. Bring to the boil and stir well to break up the dates. Remove from the heat and cool slightly.
- Stir in the sugar, molasses and egg. Fold in the remaining ingredients and pour into the loaf pan
- Bake for 45 - 50 minutes until baked through. A skewer inserted into the middle should come away clean.
- Cool slightly before cutting but serve warm with butter.
