Brown Sugar Walnut Meringues
A slightly salty, slightly caramel take on an old favourite.
Ingredients
- 4 egg whites 240g
- ½ tsp cream of tartar
- 120 g treacle sugar OR 110g granulated sugar and 1 tbsp molasses
- 100 g walnuts roughly chopped
- Maldon salt for sprinkling optional
Instructions
- Whip the egg whites and cream of tartar to stiff peak. Gradually add the sugar beating well in-between additions. If using white sugar, add in the molasses into the egg whites with the first sugar addition
- Fold in the walnuts and scoop our the meringue into form shapes on to trays lined with baking paper. Sprinkle each one with a little flaked sea salt.
- Bake at 100℃ for 2- 3 hours. The meringues should come away easily from the paper. The longer they bake the more dry they will be.
- Store in an air tight container. Makes about 30 meringues.
