Authentic Spitzbuben
An amazing Austrian Christmas cookie! These ones are filled with homemade strawberry jam, but more traditionally with raspberry jam. The recipe for the jam is here

Traditional Austrian Jam sandwich cookie
Ingredients
- 1 ½ cup butter softened (approx 375g)
- 1 cup sugar 1
- 1 tsp vanilla essence
- 1 egg
- 3 ½ cups flour
- ½ tsp salt
- ¼ cup jam for filling
- Icing sugar for dusting optional
Instructions
- Preheat the oven to 180°C
- Prepare cookie trays by lining with baking paper
- Beat the butter, sugar, vanilla and egg until fluffy.
- Sift in the dry ingredients and beat until combined and coming together. Place the dough in the fridge if needed to allow for easy rolling
- Roll out to about 5mm thickness and cut out equal numbers of "tops" and "bottoms". Bottoms should be solid 3cm circles and tops should be 3cm circles with a smaller section cut out (eg star or smaller circle)
- Bake for 10 - 12 minutes until lightly golden and starting to set
- Cool and fill with a blob of jam
- Dust with icing sugar if desired
