Perfect zesty, tasty tea cakes

These elegant tea time treats are traditionally made in a shell tin, but if you don’t have the tin, you can make them in muffin or tart tins.

Change up the flavour by substituting vanilla, or orange zest or any other flavour that takes your fancy.

Ingredients
  

  • 125 g butter melted
  • 2 eggs
  • 125 ml sugar
  • zest of one lemon
  • 250 ml flour
  • pinch salt
  • icing sugar for sprinkling

Instructions
 

  • Prepare the madeleine tin by brushing with melted butter and set aside
  • Preheat oven to 180°C
  • Beat the eggs and sugar with an electric mixer until light and thick (about 5 minutes)
  • Add the zest, flour and salt and fold in
  • Add the remaining melted butter and fold in
  • Set aside to rest for a few minutes
  • Scoop a large tablespoonful into each mould, filling them evenly
  • Bake at 180°C for about 12 - 15 minutes (they should be bouncy to the touch and lightly browned on the edges
  • Serve with a dusting of icing sugar
